As the winter chill settles in, there’s nothing better than comforting meals that bring warmth, flavour, and a little joy to the table. This week’s cooking section is all about hearty dishes perfect for cold mornings and cosy evenings. From a creamy bowl of oats porridge to start the day, to the rich and flavourful Mediterranean chicken bake, and the satisfying bruschetta chicken pasta, these recipes are designed to keep you warm while making home cooking simple and delicious. Whether you are preparing a family dinner or looking for comfort food after a long day, these winter favourites are sure to make the season feel a little warmer.

1.Oats and porridge

Warm, creamy and comforting, oats porridge is the perfect way to start a cold winter morning. Packed with goodness and easy to prepare, this wholesome breakfast not only keeps you warm but also provides the energy needed to take on the day. Whether enjoyed plain or topped with fruits, honey or cinnamon, a bowl of oats porridge brings both comfort and nutrition to the table during the chilly winter season

 Ingredients

  • 2 ½ cups water
  • 1 cup rolled oats
  • 1 tablespoon white sugar, or to taste (Optional)
  • 1 teaspoon salt, or to taste (Optional)
  • 2 bananas, sliced
  • 1 pinch ground cinnamon
  • ½ cup cold milk (Optional)

Method

  • Gather all ingredients.
  • Combine water and oats in a saucepan; season to taste with sugar and salt. Add bananas and cinnamon.
  • Bring to a boil, then reduce heat to low, and simmer until the liquid has been absorbed, stirring frequently.
  • Pour into bowls and top each with a splash of cold milk.

2.Bruschetta chicken pasta

This bruschetta chicken pasta transforms simple ingredients into a vibrant, restaurant-worthy dinner that's become my go-to for those nights when I need something impressive without hours in the kitchen. The classic Italian bruschetta flavours paired with tender chicken and delicate angel hair pasta create a dish that feels both comforting and fresh.

Ingredients

 1 kg roma tomatoes, seeded and diced

 2 cloves garlic, minced

 ½ cup torn fresh basil, plus extra leaves for garnish if desired

 1 tablespoon balsamic vinegar

 Kosher salt, to taste

 Freshly ground black pepper, to taste

 ½ pound angel hair pasta

 1-1½ pounds boneless, skinless chicken breasts

 Balsamic glaze, optional

 1 tablespoon olive oil

Method

Combine the Roma tomatoes, garlic, torn basil, and balsamic vinegar in a medium bowl. Season generously with salt and pepper.


Cook the angel hair pasta to al dente according to package instructions. Drain the water and return the pasta to the pan. Drizzle with 1 tablespoon of olive oil and toss to prevent sticking. Set aside.


Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken for 4-5 minutes per side, or until the internal temperature reaches 165°F (74°C).

Add 1 tablespoon of olive oil to the same skillet and stir in the bruschetta mixture. Cook for 1-2 minutes, just until heated through. Turn off the heat, then add the cooked pasta to the skillet.


Slice the chicken breasts and add them to the pasta. Divide the pasta and chicken into bowls and garnish with fresh basil leaves. Optionally drizzle with balsamic glaze and add grated Parmesan or Mozzarella cheese before serving.

  1. 3. Mediterranean chicken bake

This Mediterranean chicken bake is a fresh, wholesome, and flavour-loaded dinner that brings sunshine to your table. With tender herbed chicken, roasted veggies, and a tangy finish of feta and olives, it’s a simple one-pan wonder you’ll want to make again. Whether you’re meal-prepping or cooking for family, it’s a go-to recipe that never disappoints.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken breasts and coat thoroughly. Let marinate for at least 15 minutes.
  3. Arrange the cherry tomatoes, zucchini, red onion, and bell pepper in a baking dish. Drizzle with a bit of olive oil and season with salt and pepper.
  4. Place the marinated chicken on top of the vegetables. Scatter Kalamata olives over everything.
  5. Bake for 25–30 minutes, until the chicken is cooked through (internal temp: 165°F/74°C).
  6. In the last 5 minutes, sprinkle with crumbled feta and return to the oven.
